On the 1st January 2006, new EU food hygiene regulations replaced the existing legislation governing food safety and food hygiene. This new EU food law aims to optimise the protection of public health by improving and expanding the legislation that had been in place. Many existing product-specific Directives relating to health conditions for the production and placing on the market of certain products of animal origin for human consumption have been repealed as well as some laws relating to food hygiene. They have been replaced by the legislation listed below.

Food law requirements for hunters of wild game are set out in an FSAI publication Guidance on hunting and processing of wild game for human consumption.

This guidance covers legislation, training requirements as well as guidance on the hygienic handling and processing of game for human consumption.
