Competent authorities must verify that food business operators comply with legislation relevant to their food business. This includes Commission Regulation (EC) No 2073/2005. The FSAI’s Guidance Note 27 comes with a checklist to assist enforcement officers to assess a food business operator’s compliance with the Regulation. The checklist guides enforcement officers to look at how a food business operator has:
- Identified relevant criteria
- Sampled and tested food
- Taken action if test results were unsatisfactory
- Analysed trends in test results
- Conducted environmental monitoring
- Complied with the Regulation’s labelling requirement for minced meat and meat preparations
- Demonstrated compliance with criteria throughout the shelf-life
Enforcement officers need to consider each food business on a case-by-case basis, taking into account the type of activities they carry out, when assessing compliance with this Regulation.
